The reason the arranger videos get a lot of views is not only because we have a lot of people with arrangers now, but also because the tunes are more recognizable, covers of known songs.
Now if you were to play something like a J.M. Jarre piece cover or at least something inspired by it you might get more views.
As far as arrangers go, yes they won't really produce the exotic sounds of most synths, they are mostly oriented in reproducing natural instruments faithfully.
