Regardless of the connector used, in general, all main outs of a board should mirror each other in level controls, while assignable outs will be independent.
That said, as I understand it, 3-wire balanced connections (XLR/TRS) do provide a slightly hotter signal than 2-wire (TS)--assuming that you are running 3-wire cable and terminating at a 3-wire connection at the other side--possibly by virtue of essentially running "two copies" of the signal simultaneously, but I'm at the edge of my knowledge here. There's also the possible variable of unbalanced vs. balanced outs being -10 vs. +4 dB.
