They don't use coversSo, how do the professionals handle this?

I am just kidding (And I am not a professional. I have a non stretchy cover though)
But what you are looking for can probably be accomplished by the following two steps:
- Leave the volume knob at a predictable location which you can return to very quickly every time (e.g. halfway through)
- Adjust the overall volume from the mixing tab in your performances using the Mst volume (rightmost control here):
Save your performance and live set.
Mostly unrelated rant: The Montage M manuals still look like an amateur's job after all these months. The PDFs are produced from the HTML version and the links don't work. The screenshots are tiny (even smaller than the keyboard's actual screen). Yamaha you need to up you game. Classic Montage had vastly better manuals.
